You press the pedal down FIRMLY and leave it down, while controling the car during skidding. ABS, when used properly, is 10000x better than non-ABS. When used wrong, it causes harm. Sadly, 99.9% of people pump the brake, don't steer, etc. and it causes the ABS to not do it's job really.
But ABS is definitely safer in adverse weather conditions, and would be faster around a track in the hands of a less than professional driver such as myself. I’m not big boy tracking my Miata until I can upgrade to wilwoods and retrofit ABS. Non abs is fine for autocross though and spirited street driving in anything less than snow/heavy rain.

If you want to ride old bikes without ABS, it's better to be familiar with proper brake technique and not to rely on ABS too much. Relying on it too much might result in you accidentally locking up your wheels on a non ABS bike, which could be fatal. So if you occasionally ride non ABS bikes, you should be practicing proper brake technique.
